This attractive, bone-in roast is one of the finest cuts of lamb. Roast briefly, then slice between the bones into luscious pink cutlets.
Each rack has between 7 & 8 bones.
This product may be supplied frozen.
French-style Rack Of Lamb With Proper Gravy
For the Lamb racks
2 French trimmed racks of lamb
Salt and freshly ground pepper
1 tbsp of redcurrant jelly
For the gravy
1 tbsp plain flour
65ml red wine
300ml chicken stock
1 tsp Worcestershire sauce
1 tsp lemon juice
1 tbsp redcurrant jelly
A dash of gravy browning
Preheat Oven 220c
Rub the lamb with olive oil, season well and spread the redcurrant jelly
Sit the lamb in a roasting tray, the bone tips facing downwards and inwards.
Roast at the top of the oven for .12-15 minutes for pink lamb, 20 minutes for well done.
Wrap loosely in foil while you make the gravy
Off the heat, whisk the flour with the fat and juices in the tin. Pour the wine and remaining ingredients, whisk well. Bring to boil and simmer for 5 minutes or until thickened.
Check the seasoning
Serve 2/3 cutlets per person with the gravy and serve with preferred side dishes.
